Another social distancing blog post. This time, I am going to focus on how to multi-purpose one ingredient. Rice.
I have been eating rice this week because I already have a ton of it. My favorite appliance is my Zojirushi rice maker, and it has been working this week. It cooks perfect rice, which I have then used as fried rice, jumbalaya, rice pudding, rice and beans and now, as it is the weekend, pizza.
Something about carbs, cheese and pepperoni just makes Saturday feel like Saturday. I am going to Zoom conference my friends, enjoy my pizza, a cocktail, and then we are all going to watch a movie on Netflix “together.”

Ingredients:
2 cups cooked rice (brown or white)
3 quarters cup shredded cheddar cheese
1 beaten egg
Salt and pepper
1 teaspoon oregano
Pizza sauce
Pepperoni
Italian cheese blend
Method:
Preheat the oven to 400 degrees F.
In a large bowl, mix together the rice, shredded cheddar cheese, beaten egg, salt, pepper and oregano. Spread into a thin layer on a pizza pan. Bake for 4-8 minutes; until set and beginning to brown.
Top with pizza sauce, cheese and pepperoni. Bake another ten minutes or until the cheese is golden brown. Enjoy!
