This vibrant red bean dip is a great appetizer for July 4th. The sweetness of the beets combined with the creamy beans and spicy garlic make a yummy dip that looks particularly festive served with white and blue corn tortilla chips. Make this for your party and watch it get devoured!
3 medium beets
19 ounces white beens, drained and rinsed (cannellini, great northern)
2 tablespoons fresh lemon juice
1 tablespoon tahini paste
2 chopped garlic cloves
2 tablespoons extra virgin olive oil
Salt and pepper
White and Blue corn tortilla chips
Preheat the oven to 375 F degrees. Roast the beets in the oven for 30 minutes or until tender. Rub off the skin. Cut the beets into a dice.
Add the beans, beets, lemon juice, garlic, tahini paste, oil, salt and pepper to a food processor and process until smooth. Taste and adjust seasoning as necessary. Serve with tortilla chips and enjoy!
